Easter Brunch at Shackamaxon CC - to Support Educational Enrichment Foundation of Scotch Plains-Fanwood

  The Shackamaxon Country Club the nearly century old, private golf club in Union County that boasts an A.W. Tillinghast golf course, will open its doors to the community for Easter Brunch on April 8, 2012, from 12 pm – 3 pm.  A portion of the proceeds from Easter at “Shack” will benefit the Education Enrichment Foundation of Scotch Plains-Fanwood, a 501(c)(3) non-profit organization that raises funds for the maintenance and enhancement of the area’s public schools.  Tickets are $42 for adults, $20 for children ages 4-12, and children under three are the club’s guests. Reservations are required and may be booked by contacting Kathy Obropta at (908) 233-1300.

Shackamaxon’s Easter celebration will include children’s holiday favorites such as an Easter Egg Hunt and a visit from the one and only Easter Bunny, followed by a lavish brunch exquisitely prepared by Shackamaxon’s team of culinary experts.  Shackamaxon’s new Executive Chef Joe Nastro, who hails from the award-winning restaurant ‘allium’ in Great Barrington, Mass., will offer everything from  freshly baked muffins, a charcuterie table and a smoked fish station to rosemary roasted leg of lamb, smoked Virginia ham, oven roasted turkey and The Shackamaxon Chocolate Fountain.

“Shackamaxon has a rich history in the area, and we are thrilled to re-introduce the club to the community by opening to the public on this Easter and Mother’s Day as well as several other holidays this year,” said Shackamaxon co-owner Warren Leeds.  “Partnering with EEF on this event gives us an opportunity to give back to the youth of Scotch Plains-Fanwood and further our commitment to being an integral part of the community.”

About The Education Enrichment Foundation

The Education Enrichment Foundation of Scotch Plains-Fanwood, Inc. (“EEF”) is a non-profit corporation under the Internal Revenue Code Section 501(c)(3). EEF was incorporated in 1993 and its purpose is to raise funds “to be applied toward the maintenance and enhancement of the quality of education in the public schools of Scotch Plains and Fanwood, New Jersey and for related purposes.” Historically the Foundation has provided grants to teachers for a variety of projects. Since 1994 EEF has granted funds for more than 65 programs to enhance instruction at all grade levels. The grants ranged from $100 to $1,500.
