Being a vegetarian and cooking for my family can be tricky! I have tried many differnt "burger" recipes and this one satisfies everyone! It is very delicious!
1/2 c cooked brown rice) 2 tbs olive oil divided 3 garlic cloves minced 1/2 c minced red onion 11/2 tsp ground cumin 1 tsp dried oregano 2 tbsp chopped walnuts 1/2 cup chopped fresh spinach 115 oz can drained black beans 2 tbsp white wine vinegar
1. place brown rice in small bowl
2. heat 2 tsp oil in pan med heat. add garlic and saute 1 min. stir in onion and saute 5 mins, stir in cumin, oregano and walnuts. cook 45 seconds. add spinach and cook 30 secs until wilted.
3. combine beans and vinegar. mash well with a fork. stir in rice and onion spinach mixture and mix until well blended, cover and place bowl in fridge for at least 1 hour.
4. heat remaining oil, remove mixture from fridge and quickly shape into 6 patties. place in skillet and cook 3-4 minutes per side. maybe a little crumbly, so put burger immediately onto bun.
