Barbeque for the Big Day: What Works Best?

Tips for a good Independence Day cookout.

What makes for a good barbeque?

“Spare ribs, baby back spare ribs, steak, London broils, hamburgers, hotdogs, chicken,” said Nick Losavio, owner of John’s Meat Market.

As the Fourth of July approaches, residents around Scotch Plains and Fanwood are stocking up on their cookout requisites.

Losavio says that these days, no one meat item sells better than another.

“Hamburgers, hotdogs, yeah,” he said. “But everyone has their own tastes, that’s the key now.”

John’s Meat Market sells some pulled pork and chicken already prepared, but for those who want to give the cooking a go themselves, Losavio said the key is “to just watch it.”

“Some people want it well done, some people want it rare,” he said. “A lot of people slow cook it. You can broil it, but it’s not as good, in my opinion.”

If pulled pork is your preference, Losavio says he recommends using filet mignon pork.

“A lot of people use pork butt,” he said. “But the filet mignon pork has less fat content. The filet mignon has 4 grams. The butt has 20 grams.”

John’s Meat Market will be open from 7 a.m. to 6 p.m. on Friday to accommodate the July 4 demand. In addition to meats, the store also sells already made potato salad, macaroni salad, cole slaw and other essential sides.

If cooking yourself doesn’t sound like fun, the Stage House Restaurant on Park Avenue in Scotch Plains will be open on Saturday. The restaurant’s “free bbq” special will continue on Independence Day. Patrons who sit on the patio can order as much barbeque as they want, and pay for it what they want. Drinks and sides are menu-priced.
